This vegetable was originally domesticated in Mexico by native peoples about 9,000 years ago. For this vegetable to grow it takes 2 or 3 weeks after the last frost in spring. Corn is a tender, warm-season annual that is best planted after the soil temperature reaches 60 F ( 16 C). Corn is rich in vitamin C, an antioxidant that helps protect your cells from damage and wards off diseases like cancer and heart disease. People mostly cook corn by itself either by boiling or grilling it. Sometimes corn can be added into rice as they do in Chipotle.
